Happy Cinco De Mayo!! Today I'm going to share with you one of 

my favorite queso fundido recipes. Doesn't it look mouth watering 

and makes you want to dip a chip through the screen? Want to

Ingredients
  • 2 cups smoked andouille sausage, chopped
  • 2 cups jack cheese, grated
  • 2 cups sharp cheddar, grated
  • 1 jalapeno, diced
  • 1 Serrano, diced
  • 1/4 cup green onions, chopped
  • 1 tablespoon sour cream
  • 1/2 teaspoon creole seasoning
  • extra virgin olive oil
  • chips, bread, crackers to serve
  • limes to garnish
Instructions
  • Preheat oven to broil.
  • In a skillet add 2 teaspoons of olive oil over medium heat.
  • Add sausage and peppers, saute for about 5 minutes.
  • Drain sausage and peppers on a napkin and remove all oil from skillet.
  • Place sausage and peppers back into pan and mix with sour cream.
  • Add cheeses and half the green onions, mix well.
  • Broil for 5-6 minutes.
  • Garnish with remaining green onions.
  • Serve immediately.

Peanut Butter Oatmeal Pecan Cookies-Creole Contessa

Ingredients
  • 2 cups quick cooking oats
  • 2 cups flour
  • 2 sticks butter, unsalted, room temperature
  • 2 eggs, room temperature
  • 1 1/2 cup chocolate chips
  • 1 1/2 cup pecans, diced
  • 1 cup peanut butter, creamy
  • 1 cup brown sugar
  • 1 cup white sugar
  • 1 tablespoon vanilla
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions
  • Preheat oven to 350 degrees.
  • Beat butter and sugars together in a mixer until creamy.
  • Add eggs one at a time, beating about 20 seconds between each addition.
  • Add peanut butter and vanilla, beat well.
  • Mix flour, salt, baking powder and cinnamon together in a bowl, reserve 1 tablespoon to toss chocolate chips in prior to adding.
  • Add flour to butter/sugar mixture in 3 batches, beating 20 seconds between each batch, scrap down sides of mixer.
  • Add oats to mixer and beat for 20 seconds.
  • Toss chocolate chips and pecans with reserved flour and add to mixer. Beat about 20 seconds.
  • Chill dough in the refrigerator for at least 30 minutes.
  • Using a rounded tablespoon form dough into balls. Use a fork to flatten.
  • Bake cookies at 350 degrees for 12-13 minutes. Allow to cool for a few minutes before serving.




I know I'm a little late on this but today's post is a movie review on my new favorite movie The Hundred-Foot Journey. This movie is really good (and not because the guy who plays the main character Hassan is good looking) and it's about a family leaving India to go to France because their restaurant was set on fire and they meet this lady, Madame Mallory, who has her own restaurant as well. Well let's just say Hassan's dad and Madame M don't exactly get along in the beginning. Meanwhile Hassan is learning how to cook like a French (warning: the food you see in this movie looks really good) and falls in love with the other main character, Marguerite, who happens to be Madame M's daughter. While all of this is going on Madame M and Hassan's dad are always at each other (it's very funny too). At the end of the movie both family's get along really well with each other and Hassan ends up being a well-known chef. Now for the moral of this story: Food can bring people together. What's up people! Today this post is going to be about history, and

history.Well I just happen to take AP world history and it has 

turned me into a world history nerd. Recently we were assigned a 

group project to do a video on one of the rulers that my teacher has 

been talking about. Me and my group members chose King Henry
