Happy Cinco De Mayo!! Today I'm going to share with you one of 

my favorite queso fundido recipes. Doesn't it look mouth watering 

and makes you want to dip a chip through the screen? Want to 

know how to make it? Look at the recipe below. Disfrutáis!


Ingredients
  • 2 cups smoked andouille sausage, chopped
  • 2 cups jack cheese, grated
  • 2 cups sharp cheddar, grated
  • 1 jalapeno, diced
  • 1 Serrano, diced
  • 1/4 cup green onions, chopped
  • 1 tablespoon sour cream
  • 1/2 teaspoon creole seasoning
  • extra virgin olive oil
  • chips, bread, crackers to serve
  • limes to garnish
Instructions
  • Preheat oven to broil.
  • In a skillet add 2 teaspoons of olive oil over medium heat.
  • Add sausage and peppers, saute for about 5 minutes.
  • Drain sausage and peppers on a napkin and remove all oil from skillet.
  • Place sausage and peppers back into pan and mix with sour cream.
  • Add cheeses and half the green onions, mix well.
  • Broil for 5-6 minutes.
  • Garnish with remaining green onions.
  • Serve immediately.

Peanut Butter Oatmeal Pecan Cookies-Creole Contessa

Ingredients
  • 2 cups quick cooking oats
  • 2 cups flour
  • 2 sticks butter, unsalted, room temperature
  • 2 eggs, room temperature
  • 1 1/2 cup chocolate chips
  • 1 1/2 cup pecans, diced
  • 1 cup peanut butter, creamy
  • 1 cup brown sugar
  • 1 cup white sugar
  • 1 tablespoon vanilla
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions
  • Preheat oven to 350 degrees.
  • Beat butter and sugars together in a mixer until creamy.
  • Add eggs one at a time, beating about 20 seconds between each addition.
  • Add peanut butter and vanilla, beat well.
  • Mix flour, salt, baking powder and cinnamon together in a bowl, reserve 1 tablespoon to toss chocolate chips in prior to adding.
  • Add flour to butter/sugar mixture in 3 batches, beating 20 seconds between each batch, scrap down sides of mixer.
  • Add oats to mixer and beat for 20 seconds.
  • Toss chocolate chips and pecans with reserved flour and add to mixer. Beat about 20 seconds.
  • Chill dough in the refrigerator for at least 30 minutes.
  • Using a rounded tablespoon form dough into balls. Use a fork to flatten.
  • Bake cookies at 350 degrees for 12-13 minutes. Allow to cool for a few minutes before serving.




I know I'm a little late on this but today's post is a movie review on my new favorite movie The Hundred-Foot Journey. This movie is really good (and not because the guy who plays the main character Hassan is good looking) and it's about a family leaving India to go to France because their restaurant was set on fire and they meet this lady, Madame Mallory, who has her own restaurant as well. Well let's just say Hassan's dad and Madame M don't exactly get along in the beginning. Meanwhile Hassan is learning how to cook like a French (warning: the food you see in this movie looks really good) and falls in love with the other main character, Marguerite, who happens to be Madame M's daughter. While all of this is going on Madame M and Hassan's dad are always at each other (it's very funny too). At the end of the movie both family's get along really well with each other and Hassan ends up being a well-known chef. Now for the moral of this story: Food can bring people together. What's up people! Today this post is going to be about history, and 

I know what you're thinking who wants to see a post about 

history.Well I just happen to take AP world history and it has 

turned me into a world history nerd. Recently we were assigned a 

group project to do a video on one of the rulers that my teacher has 

been talking about. Me and my group members chose King Henry 

VIII and took it to another level. You might have heard of the old 

MTV show Pimp My Ride well ladies and gentleman I introduce 

to you Pimp My Wife: King Henry VIII edition!



With less then 10 days left till Christmas I think it's an appropriate 

time to do a post on winter fashion. The picture above shows just a 

couple of ideas. For example you can wear the polka dot shirt with 

the pants and accessories or you can wear the green or black 

sweater.

You know what I love more than Christmas? Eating food on
Christmas! And with that being said I’m going to share a few 

recipes for anyone who wants a little help choosing what to 

cook on Christmas. My first recipe is rice dressing or as my 

family likes to call it “dirty rice”. Not only is it

delicious, it has the right temperature of spice. I only make

this on holidays and when I taste it (because a good chef 

has to taste her food) I have to restrain myself from eating all 

of it.


Here’s what you’ll need to make it:
1 lb ground turkey
1 small pack of chicken gizzards
1 cup gizzard juice
1 bell pepper, diced
1/2 white onion, diced
1/2 red onion, diced
4 stalks celery, chopped
4 cloves garlic, chopped
1 bunch parsley, chopped
1 bunch of green onions
2 tablespoons extra virgin olive oil


For the rice:

  • 3 cups Mahatma Thai Jasmine rice, dried
  • 4 1/2 cup beef broth, low sodium


Here’s what you have to do to make it:
  • Add beef broth to a large rice pan, bring to boil.
  • Stir in rice, cover, reduce heat to low and cook 15 minutes, remove from heat, allow rice to steam 10 minutes more.
  • Transfer mixture to a large bowl, add rice a little at a time until enough rice has been added and mixture remains moist. You may not need all the rice.
  • Add chopped parsley and mix well.
  • Check seasonings.
  • Rinse chicken gizzards and add to a stock pot, cover with water, cook over medium heat for about 1 1/2 hours, adding more water if needed.
  • You will need to reserve 1 cup of gizzard cooking liquid..
  • While gizzards cook, in a medium pan, add olive oil and heat over medium-high heat, add bell peppers, onions, and celery. Saute for about 5 minutes then add garlic and cook 1 minute more.
  • Add ground turkey, break up, add seasonings and saute until browned and cooked through. Turn turkey-vegetable mixture off the heat and set aside.
  • When gizzards are fork tender, remove from heat, drain, reserving gizzard liquid.
  • Add gizzards to a food processor and chop lightly.
  • Add chopped gizzards to turkey-vegetable mixture and heat over medium heat, mix well. Add gizzard cooking liquid.









Now that it's officially December it's time for winter wonderland to

begin! Let's start this post with ABC Family's 25 days of Christmas

special. For those of you living in an igloo the 25 days of 

Christmas special is a ABC Family tradition where every 

December 1st they play all the X-mas movie classics. But that's not 

it not only can you watch it on your TV you can watch it online 

too.

Thanksgiving is only 2 days away! To celebrate this day I donated 

more than 50 cans to the Salvation Army for a food drive we were 

doing at school. Now that the first part of the TG to-do list is done 

time to move on to the second part: eating. Now as I said in a 

previous post I wanted to make pumpkin donuts one day (still 

waiting) and it might be next month (hopefully).

This might not be a donut but it's pumpkin (from here)


Anyways back to reality, let's talk about the food I'm going to devour on TG. 

I'm going to be making my famous rice dressing as well as some macaroni and

cheese topped with bacon, while my dad is smoking the meat and my ma' is 

well doing what she does best supervising. That's all for this post check back

Guess what Swifties: there’s a new Taylor Swift album out! If you didn’t know that well where have you been. Her new album is called 1989. The reason behind the name you ask? Well it all started with her birth year. Taylor felt that she should do a tribute to late 80’s pop music while still making this album a biography. The first single for this album is called Shake It Off. When I first heard the title I thought “Wait a second isn’t that the title of a Mariah Carey song?”, but then I realized that the songs have two different meanings, Taylor is shaking off the haters while Mariah is shaking off her ex. In my opinion not all of the songs were as great as others, but the sound of  this album is like a bubbly, magical forest type of sound. The songs included are:

A few weeks back my journalism class had a potluck.

I had no idea what I wanted to cook so I needed to do a little research.

After looking at what the other people were bringing I decided on Mexican food. 

Who doesn't love Mexican food? 

After contemplating what type of Mexican food to make I went with enchiladas.

Not just plain enchiladas we're talking fully loaded with ground turkey and cheese.

Ground Turkey Cheese Enchiladas

Servings: 6-8

Ingredients:

1 lb ground turkey
2 cups red chili enchilada sauce
1 tablespoon seasoning salt

1/2 tablespoon chili powder
2 teaspoons black pepper
2 teaspoons garlic powder

2 teaspoons onion powder
24 corn tortilla shells
2 cups jack cheese, grated
2 cups sharp cheese, grated
1 onion, diced
2 cloves garlic, minced
extra virgin olive oil
sour cream, green onions, tomatoes, avocado, to garnish


Directions:

Preheat oven to 375 degrees.

Mix seasoning blend together and set aside.

In a skillet add about 2 tablespoons of extra virgin olive oil, add onion and saute for 5 minutes, add garlic and cook 1 minute more. 

Add ground turkey and spices, cook for about 10 minutes.

To assemble casserole, place 1 cup of sauce on the bottom of a greased 13X9 inch casserole dish.

Dip tortilla shell into sauce and place on top of sauce in pan, slightly overlapping. 

Top with half the turkey mixture, top with 1 cup of cheese.

Repeat process, last layer should be dipped tortilla shells. Top with cheese, top with remaining sauce.

Bake at 375 degrees for 30 minutes. 

Garnish with green onions, sour cream and fresh tomatoes.
